The spontaneous fermentation is interrupted by the cold, then allowed to restart in the bottle. This style in the cellar defines its lively and sincere character. On the nose, it is fragrant, with a citrus note, a floral touch, and a hint of bread crust. On the palate, it is dry and savory, with a lively sip and a slight tannic grip, finishing fresh. Ideal with a plate of fried anchovies or a Ligurian focaccia.
