The Cabernet Sauvignon from Endrizzi is a guarantee of success from the historic Trentino winery. Among the vineyards of San Michele all'Adige, the Endrizzi family has been tending their vines since 1885, although the winemaking tradition dates back even further. They were pioneers regarding fine international grape varieties: Cabernet Sauvignon and Merlot were the first to be planted at the beginning of the twentieth century. The principles on which the development of the winery is based are linked to sustainability and respect for the nature that fills the valleys along the Adige. These same cornerstones have allowed for the harmonization of advanced systems and artisanal practices.
Endrizzi Cabernet Sauvignon is made from grapes that grow in the historic and scenic vineyards at Masetto, cultivated partly on trellises and partly in the Trentino pergola style. The maceration takes place over 7/8 days in Ganimede fermenters, which utilize cutting-edge technologies. The fermentation then moves to steel tanks, and the aging occurs in large oak barrels for 12/14 months. In the vineyard, the least invasive solutions possible for the territory have been adopted: from sexual confusion to construction of bird nests, to the care of grass without chemicals. And it is replicated also in the underground cellar, where the energy comes from solar panels, the grape delivery occurs by gravity, nitrogen is separated from oxygen and prevents oxidation.
The Cabernet Sauvignon from Endrizzi is the certainty of finding in the glass what a true Cabernet Sauvignon represents. That ruby red with intense and deep tones, those clear and characteristic aromas of red fruits and spices, with balsamic hints that envelop and evoke a warm embrace. The drinking experience stands out for its elegance, the taste is dry and decisive, in a harmonized tannic structure in the sip, not aggressive.
